Foods in WI exceed 7 day prep date. Ensure foods are discarded within 7 days from prep. COS - manager discarded. Pans & containers stacked wet nested. Allow utensils to completely air dry before stacking.

Drinks in food prep areas must be single service cups with tight fitting lids & straws. COS - drinks removed. No paper towels in women's employee restroom. Manager restocked. Slime behind baffle of ice machine. Food residue on lemon wedger, veggie chopper, can opener, & waffle iron. Need a PSI gauge for ware washing machine, have set to 15 - 25 for sanitizing rinse cycle. Bulk container of soup at 51 F after cooling overnight. Ensure foods cool from 135F to 70 F in 2 hours & 70F to 41F in 4 hours (6 hours total). COS - Manager volunteered to withhold from sale. Wiping cloths sitting out on counter tops. Keep stored in a sanitizing solution between uses. Solution should be 50-100 ppm for chlorine or 200-400 ppm for quat. COS - Manager removed wiping cloths. Women's employee bathroom needs cleaned. Accumulation of debris on floor in mop sink area, check for debris under shelving & along floor/wall juncture. Repair wall at mop sink.

Open drink cups & bottles sitting in numerous areas of the kitchen. Employee drinks must be single service cups with tight fitting lids & straws. Metal rack placed in front of hand washing sink in ware washing area. Keep all hand sinks accessible, relocate metal rack. Pink & black slime along baffle & interior of ice machine. Accumulation of metal pieces & gunk on can opener blade & casing. Food residue on food contact surfaces of waffle iron & lemon wedger. Check for cleanliness to sight & touch before storage or reuse. Need a visible PSI gauge on ware washing machine. Must be 15 - 25 during sanitizing rinse cycle. Repair ware washing machine rinse temperature, must reach a minimum of 150F. Clean dust off fans & knife sharpener. Clean interior of microwaves & handles/legs of waffle irons.

Drink in food prep areas must be single service cups with tight fitting lids&straws.No gum chewing in food prep areas.Handsink has no paper towels,keep stocked.Meat slices,waffle batter nozzles,waffle irons&can openers have food residue.Ice machine slimy behind baffle.WI freezer leaking water and open boxes of food,need to designate sinks for specific purposes(meat,veggies,etc.)Handles to knives falling apart,paper towel dispenser broken at ware washing handsink.Need PSI gauge for sanitizing rinse at ware washing machine.WI cooler walls, ceiling,& fan guards dirty.Fans in prep areas dirty.Bottoms of warming cabinets have food debris.Pans stacked wet nested,allow utensils to completely air dry before stacking.No trash cans accessible to handsinks.Wall,cove base&floors at ware washing station has mold repair cracked cove base.Prep sinks&handsinks have film&debris in drains,clean after use&do not dump foods in handsinks.
