Must have recording keeping or log for "blanched" wings.Must discard after a maximum of 4 hours if using time as a control. Label bulk food containers. Eggs, milk& deli meats past expiration dates. Food discarded per manager. Use approved thawing methods for frozen foods. Foods in sink must be under running water at 70F or less where food is maintained at 41F or less. Foods transferred to cooler or placed under cold water. Check for visible & calibrated thermometers in all coolers & freezers. Check food probe thermometer for calibration. Boxes of fries stored with non-potable ice. Fries moved per manager.Cloths must be kept submerged in sanitizing solution between uses,do not tie to aprons/pockets. Chili & hot dogs prepped in veggie sink. Veggie sink is designated for washing fruits & vegetables only. Accumulation of debris on floor throughout kitchen & WI, cooler/freezer. Clean all the way to floor/wall juncture.
