Salt & spices on cookline need covers to protect from potential contamination. Foods in WI, RI, & prep coolers need covered when stored. COS - foods covered. Slicer, can opener, & cutting boards have dried food debris. Check for cleanliness to sight & touch before storage or reuse. 3 compartment sink not set up in correct order of wash, rinse, sanitize. COS - utensils cleaned in proper order. Egg roll dough thawing at room temperature, use approved thawing methods such as cold running water, in the cooler, or part of the cooking process. COS - foods transferred to cooler at 35F. Foods stored in original cans, transfer to food grade containers once opened. Clean outsides of bulk food containers.

Many containers of food stored uncovered in coolers & freezers. Keep foods covered. 3 compartment sink not set up in correct order of wash, rinse & sanitize. Shrimp thawing in standing water. Beef thawing in pan at room temperature. Use approved thawing methods such as cold running water or place in cooler. Inspection posted in public view is not most recent inspection. Foods stored in original cans, transfer to food grade containers once opened. Observed employee changing dates on foods in RI. No foods date labeled in WI cooler. Date label foods kept over 24 hrs. & discard after a maximum of 7 days.

Reinspection

Need a CFSM on staff.Designate a person in charge for every shift who has knowledge of proper cooking & hot/cold holding temperatures & can set up 3 compartment sink w/proper sanitizer levels. 10ppm sanitizer registering on test strips at sanitizing sink. Food residue on containers on air drying rack.COS - chlorine sanitizer brought to 50 ppm & containers cleaned. Egg rolls cooling on rack at room temperature, at 100F after 1 hour on rack per manager. Brought into cooler in deep tubs & tempted at 93F another hour hour later. Cool foods on pans or containers & do not stack deep to allow foods to cool from 135F to 70F in 2 hours & 70F to 41F in 4 hours (6 hours total). Do not line food containers with menus, paper not approved as food contact surface, ink can leach into foods.

No paper towels at tiki bar handsink, towel dispenser jammed, cannot access paper towels at kitchen handsink. No soap at kitchen handsink. Grime buildup in tea urn nozzle spouts, no sanitizer registering on test strips at warewashing machine. Bulk food container not labeled, label foods that are transferred from their original containers. Permit & Inspection must be posted in public view, post inspection so can be read at a distance of two feet away. Gauge cove missing on ware washing machine, no detergent dispensing during wash cycle, machine badly leaks water, needs repaired. Food residue & film on fryer & grill, in sinks and dried tea/sugar on brewing machine. Clean equipment & wipe out sinks,expecially along corners & seams after use.
