Prepline cooler unable to keep foods at 41F or less. COS - Manager volunteered to withhold foods from sale. Fresh foods transferred to operating line cooler until unit repaired. Foods thawing in containers at room temp. Use approved thawing methods. COS - Foods still below 41F & transferred to cooler. Need a food probe thermometer calibrated to +/- 2 F & able to take hot & cold holding temps. Keep thermometers in all coolers & freezers. Keep sanitizer concentratrion at least 200 ppm for quat wiping buckets. COS - fresh prepared.Utensils stacked wet nested. Allow to completely air dry before stacking. Trash & grease in dumpster area, doors left open. Keep area clean & side dumpster doors shut. Clean drains throughout kitchen.

Bags of onion gravy thawing in standing water at 78F. Use an approved thawing method (in fridge, immediately cook, or cold running water). COS - gravy voluntarily discarded. RV. Loosely covered food stored on shelf beside air conditioning leak. Move foods away from potential sources of contaminations. COS - foods moved. Containers stacked wet nested. Dressing bottles tightly closed with standing water. Allow utensils to completely air dry & invert to dry. RV Clean grease & loose trash at dumpster area. Close bids to dumpster. RV

Cooler at cook line have no thermometers.Keep easily visible thermometers in coolers & freezers. Allow pans & containers to completely air dry before stacking. Grease container filthy, dumpster door open & loose trash on ground. Clean dumpster area. Sweep out WI freezer. Back door has damaged sweep & daylight. Repair so door fits tightly to frame.

Foods uncovered in RI coolers & freezers at cook line. Residue on veggie chopper, debris on lemon wedges. Remove all soil/food residue from brushes before storage. Items cleaned & sanitized. Strainer torn, brush melted. Discard damaged utensils that could chip off into foods or cannot be easily cleaned. Items discarded per manager. Back door has gap at threshold.
