Foods stored uncovered in prep coolers. COS - foods covered. Utensils scrubbed under soapy water, rinsed, & put away. Ensure utensils are either sent through the ware washing machine or set up 3 compartment sink in order of wash, rinse, & sanitize before air drying. COS - utensils sent through machine & staff retrained by manager.

Quat sanitizer below 100 ppm in bucket, cloths sitting out on counter tops. COS - fresh sanitizer solution prepared to 300 ppm quat & cloths stored submerged in solution.

Utensils must be cleaned in order of wash, rinse, then sanitize at 3 compartment sink. Employees preparing foods must have hair restraints. Cloths sitting out on countertops & cutting boards. Keep submerged in sanitizer between uses. RV/COS - fresh sanitizer bucket prepared & cloths stored. Post inspection 15' from door, 5' to 7' from ground, & where can be read at a distance of 2' away.

Need a CFSM on staff.Raw chicken stored above raw beef & celery.Raw beef tips stored above green peppers & cabbage. Eggs stored beside celery & broths. Store ready to eat foods above/separated from raw animal foods. Raw animal foods should be stored in descending order from lowest internal cook temperature to highest internal cook temprature. Many containers of vegetables & foods in prep coolers & WI cooler stored uncovered. Food residue on can opener blade. Slime mold in ice machine, clean & sanitize frequently & thoroughly. Cabbage for egg rolls being pressed & drained on pan sitting on floor, keep foods at least 6" off floor. Wiping cloths sitting out on countertops & cutting boards,store submerged in sanitizer between uses.
